A Peruvian staple, ceviche comes in many forms, but the basic ingredients are fresh fish and lime. Here I use Tilapia with diced tomato, onion, garlic, cilantro, salt and pepper along with the lime, of course. Ceviche is garnished with Peruvian popping corn, sweet potatoes and diced avocado.

After many complaints that I didn't add tahini to my Hummus in a previous video, I make sure I use it here. The basic recipe combines 1 can chick peas, 2 cloves garlic, lemon juice, olive oil, 1 T tahini a little water, salt and pepper. I make a dbl batch and process half with a puree of chipotle peppers in adobo sauce and olive oil.

Blaise shows how easy it is to make homemade soft caremel. Brief references to the science of candymaking, but focus on ease of preparing. Ingredients: 1/2 cup cream, 1/2 cup corn syrup, 1/2 cup sugar, 2T butter. Stir all in cool pan, bring to boil over med heat and wait until temp hits 248. DO NOT STIR OR SWIRL after initial mixing. Pour into greased mold.

These knives came out early in the '90's with a diamond 'chip' facing on one side of the cutting edge. The idea is (was) that the edge, with the support of the hardest material on earth, would never dull. I never bought into it, but liked the handle! Best handle of all knives.
